Lambeth-Style Cake
This style of cake decorating is named after Joseph Lambeth of England,
a prominent decorator circa 1920-1930. This style uses over piping, or
stacking layer after layer of icing on one another, to achieve its unique
look. See the close-up photo below to see how each row of icing is one
layer less than the previous. Beveled top and bottom edges are another
characteristic of this style of cake decorating.
Traditional tops for this style of wedding cake would include many
royal icing flowers, but here Marsha created a cocoa painting plaque for
the top.

Chocolate
Rolled Buttercream
Marsha created this rolled buttercream groom's cake using two shades of
chocolate rolled buttercream icing. The grapes were hand formed. The
inlaid leaves on the side were made by first using a cutter to remove the
lighter section of icing and replacing it with darker icing cut with the
same cutter.
Chocolate rolled buttercream has a taste similar to Tootsie Rolls™.

Buttercream Cake with Wafer Paper Angel and
Roses
This cake was bordered with buttercream icing. The angel and roses were
made from wafer paper, an edible paper.

Rolled Buttercream Clown Cake
This clown was covered and decorated with rolled buttercream icing.
Portions of the features were cut from patterns, others were freeformed by
hand.

Cocoa Painting
This cocoa painting of a cute puppy was painted onto a gum paste
plaque. The design was transferred to the plaque. The shading was done
freehand.

Rolled Buttercream Kittens and Ball of Yarn
These adorable kittens were molded by hand from rolled buttercream
icing. A ball cake was covered with rolled buttercream and scored to
resemble a ball of yarn.

Wafer Paper Tiger Lily and Butterfly on
Buttercream Decorated Cake
The wafer paper (edible paper) lily was cut from white wafer paper and
airbrushed to the proper color. It was then shaped over a flower former
and let dry. The butterfly was colored with food color pens and cut out.
The body was piped from buttercream icing. The borders were piped with
buttercream icing.
