Real Chocolate

Candy products may melt during shipment in warm-weather months (April thru October). This does not affect the candy's quality or flavor and it can be remelted and used normally. (There are no refunds for melted products.)
Real chocolate must be tempered before using for dipping,
molding, etc. Tempering is the term used for bringing chocolate to specific
temperature stages at various points in the process in order for the chocolate
to hold a shape and have a sheen.
Untempered chocolate will not set up properly and
will exhibit "bloom" ( a dull finish with white streaks).

These candy coatings do not need to be tempered (see info under real chocolate) in order to hold their shape properly or have a high sheen.
Melt the candy in the top of a double boiler. Do not get the candy too hot or get any steam or water in the candy or it will become too firm.
You can also melt candy coatings in a microwave oven for 30-second intervals on medium power. Again, do not get the candy too hot or get any steam or water in the candy or it will become too firm.
You can thin the melted candy a bit if desired by adding paramount crystals or a small amount of vegetable oil.
