Dungeness Crab Cake Sculpture

 

This cake sculpture was created for the 1976 World Culinary Olympics in Frankfurt, Germany. It was made of pound cake and buttercream icing. The judges used a probe to be sure it was not a real crab. This cake, along with other displays, won Roland Winbeckler two gold medals.

Simulated Lambeth-Style Groom's Cake

 

In the South of the United States, chocolate groom's cakes are very popular at weddings. A former Texan was getting married in the Pacific Northwest and wanted a groom's cake. This simulated Lambeth-style cake fit the bill with it's formal look and Texas flair. The Lambeth-style cake was made by piping one row of icing on top of another until a very dimensional look was achieved. Various shades of chocolate icing were used to decorate this cake.

Many Lambeth-style cakes have the characteristic bevels on the top and bottom. Another characteristic is the overpiping, that is, piping one row of icing on top of another until a very dimensional look is achieved. A cake like this is very time consuming. One border alone can take several hours.
